Sambar also spelled sambaar, is a lentil-based vegetable stew, cooked with dal and tamarind broth. It is popular in South Indian and Sri Lankan cuisines.

Most people enjoy this with some hot SOFT IDLI, dosa, VADA or with plain rice. Sambar is an everyday dish that is made in most south Indian homes. It is also served in tiffin centres & restaurants with a breakfast or meal.

The sambar recipe shared here is an easy method to make delicious vegetable sambar.

Ingredient 

Toor dhal 1cup
Garlic 4cloves
Green chilli 3
Tomato 5 medium size
Onion 3 medium size
Tamarind  small gooseberry size 
Turmeric powder 1/4tbspn 
Astefoedia 1/2tbspn
Chilli powder 1tbspn 
Sambar powder 1tbspn
Curry leaves few
Coriander leaves 1bunch 
Mustard seed 1/2tbspn 
Fenugreek 1/4tbspn
Salt as required 
Water 4cup

Steps

1. Pressure cook the toor dhal with 2 onion, 3tomato, green chilli, turmeric powder, astefoedia and garlic for 3-4 whistle 
2. Mash all the ingredients once it's cooked well.
3. Heat a pan and add 2tbspn of oil.
4. Add mustard seed and fenugreek.
5. Add onion and curry leaves and saute it for 3mins.

6. Then add tomato and saute it until becomes mushy. 
7. Add chilli powder and mix it together 
8. Put the cooked dhal with required water.
9. Now add tamarind juice of 3-4tbspn
10. Add some salt and sambar powder.
11. Then add coriander leaves for garnishing. 

Note: we can have this type of sambar for idli, dosa etc
