Egg biriyani

Egg biryani  Biryani is all time favourite for everyone.  But today i made with egg.  During lockdown, its difficult to get meat and sea foods. So I thought of making egg biriyani  Ingredient  Basmathi rice 1 cup Onion 3 large size Tomato 2 small size Ginger garlic paste 2tbspn Cardamom 2 Cinnamon 1stick  Green chilli 2 milk 1tbspn Egg 3nos Coriander leaves 1bunch Mint leaves 1 bunch Curd 2tbspn Water 1 3/4 cup Oil 4tbspn  Red chilli powder- 2tbspn  Cumin powder-1tbspn  Turmeric powder 1/4tbspn  Cumin seed 1tbspn  Pepper corn 1tbspn  Saffron 5-6 Salt as required  Steps 1. First soak the rice for 30mins. And boil the egg with some salt. 2.Grind cumin seed, pepper corn, cinnamon and cardamom to form smooth mixture. 3. Heat a cooker and add 3tbspn of oil.  4. Add powdered mixture and saute it fir 30sec. Then add onion and saute until it turns golden brown.  5. Then add ginger garlic paste and saute it until raw smell gone.  6. Pepper chicken masala Its Its one of the famous recipe from chettinadu. This dish is a great feast for all spicy lovers. I have learnt this from friend.  Ingredient  Chicken 250g  Onion 2 large size (finely chopped) Tomato - 1 small size(finely chopped)(optional but am adding this for masala gravy) Green chilli 1 Red chilli powder 1tbspn  Cumin seed 1tbspn Turmeric powder 1/4tbspn  Pepper 3tbspn Ginger garlic paste 1tbspn  Oil 2tbspn  Salt as required  Curry leaves Steps 1. Heat a pan and add 2tbspn of oil. 2. Add cumin seed and onion.  3. Cook it until onion turns into golden brown.  4. Add ginger garlic paste and turmeric powder.  5. Saute it until raw smell gone.  6. Add tomato and saute it for 5mins . 7. Add chicken, salt and 2tbspn  of pepper. 8. Mix it altogether and add water to form thick consistency.  9. Cook it 5-7 mins. Then add remaining pepper powder and curry leaves before turn off the stove.

Corn kebab

Corn kebab  corn kebab as an evening snack or as a starter snack. You can serve with any dip or chutney of your choice. Ingredient  Boiled Corn 1 cup (grind coarse) Boiled potato 1/2 cup(mashed) Onion 1 large (finely chopped ) Capsicum 1 small (finely chopped) Green chilli 1 Coriander leaves 1bunch (finely chopped) Red chilli powder- 1tbspn  Turmeric powder 1/4tbspn Garam 1/2 tbspn Corn flour 2tbspn  Gram flour 2tbspn Rice flour 1tbspn  Salt as required  Corn 2 tbspn Oil Steps 1. Grind the boiled corn into coarse  2. Mash the boiled potato  3. Mix all the ingredients (grinded corn, potato, capsicum, green chilli, red chilli powder, turmeric powder, gram flour, rice flour, corn flour, garam masala, salt). 4. Roll the mixture like cylinder (note: we can make a shape as you wish) 5. Heat a tawa and add oil.  6. Fry kebab in oil . 7. Flip into other side and cook until becomes golden brown 8. Now we can serve with sauce or ketchup

So I thought of making prawn biryani.  Ingredient  Basmathi rice 1 cup Onion 2 large size Tomato 2 small size Ginger garlic paste 2tbspn Cardamom 2 Cinnamon 1stick  Green chilli 2 Coconut milk 1cup Prawn 250g Coriander leaves 1bunch Mint leaves 1 bunch Curd 2tbspn Water 1/2 cup Oil 3tbspn  Red chilli powder- 2tbspn  Salt as required  Steps 1. First soak the rice for 30mins. 2. Heat a cooker and add 3tbspn of oil. 3. Add cinnamon, cardamom and onion. 4. Cook it for 3 mins. 5. Then add ginger garlic paste and saute it until raw smell gone.  6. Add tomato and green chilli and cook it for 5 mins. 7. Then add red chilli powder and saute it well. 8. Add prawn, mint leaves, curd and coriander leaves.  9. Now add soaked rice and saute it to gether. 10. Add coconut milk and water. Put some salt for seasoning.  11.

Aloo bhurji

Aloo burji Aloo is one of the favourite veg in the world. Everyone likea that we can make many recipes with  aloo. Today i tried this recipe and i learnt from friends mom Ingredient  Aloo -3 medium size Onion- 3medium size  Tomato- 3 medium size  Chilli-2 Capsicum- 1 small Red chilli powder- 2tbspn Curd/fresh cream -2 tbspn Turmeric powder  1/4tbspn Kasthuri methi- 1tbspn Coriander leaves 1/2 cup Oil/ghee - 2tbspn Cumin seed- 1tbspn  Garam masala- 1tbspn Salt as required  Steps 1. First boil the potato with some salt. 2. Heat a pan and add 2 tbspn of oil. 3. Add cumin seed and onion. 4. Cook for 2mins then add green chilli and tomato. 5. Saute it for 5mins and add capsicum. 6. Then add boiled potato and press the potato pieces by spatula.  7. Add chilli powder and turmeric powder. Then saute it 2mins. 8. Add curd, salt, garam masala and add little water to cook well with spices. 9. Sprinkle kasthuri methi and coriander leaves on top of it. 10. Now we can serve it with dosa

Paneer butter masala

Paneer butter masala  Its one of the perfect side dish for Naan, chappathi nd dosa. Its one of my favourite dish. Ingredient  Paneer 200g Onion - 1large Tomato- 3 large Ginger 1 inch Garlic- 6 Cashew nut- 15 Kashmiri red chilli - 2 Cinnamon 1inch Cardamom 2 Oil 3 tbspn. Red chilli powder- 2tbspn Sugar 1tbspn Kasthuri methi 1tbspn Fresh cream (optional) Salt as required  Steps  1. Heat a tawa and add 1 tbspn of oil. 2. Add cinnamon and cardamom then add onion, saute it for 2mins. 3. Add tomato and red chilli. 4. Cook for 2 mins. Then add cashew nut, ginger and garlic.  5. Rest it for 5mins and grind it to form soft mixture.  6. Heat a tawa and add 2 tbspn of oil. 7. Add that mixture with water and add paneer cubes. 8. Add red chilli powder and cook for 2mins. Then add sugar and salt. 9. Sprinkle kasthuri methi leaves over the dish. 10. We can add fresh cream but its optional.

Masala Idly

Masala idly I made this recipe today.  We dont have perfect side dish to have idly. Also i dont like to have idly with chutney. But havng idly and sambar always makes it a bit routine dish.just for a change today I tried masala idly and guess what its so yummy like a street food Ingredient  Idly 5-6 Onion - 2(finely chopped) Tomato-2(finely chopped) Ginger garlic paste-1tbspn  Capsicum-1 small Turmeric powder- 1/4 tbspn Chilli powder- 1tbspn  Tomato chilli sauce 1tbspn  Garam masala- 1/2 tbspn  Salt as required Oil/butter 2tbspn Coriander leaves 1cup finely chopped  Cumin seed - 1tbspn Steps 1. Heat a tawa or pan and add 2tbspn of oil or butter. 2. Add cumin seed and onion. 3. Cook it until onion turns golden brown and add ginger garlic paste. 4. Saute it till raw smell gone and add tomato. 5. Saute it until becomes mushy then add capsicum and saute it for 2 mins add add tomato chilli sauce . 6. Add chilli powder, turmeric powder, garam masala, salt and cook it for 1 min. 7

Tawa paneer Tawa panner is an extremely simple food. It can had either as a starter or snacks and it is full of flavour. Today i made this and i thought of sharing this with everyone so i did  Ingredient  To marinate paneer Paneer-100g Curd -3 tbspn  Chilli powder- 2 tbspn Garam masala - 1tbspn  Turmeric powder-1/4tbpsn Ginger garlic paste-1tbspn  For masala gravy  Onion -1large (finely chopped) Tomato-3(finely chopped) Capsicum-1  Green chilli - 3 Cumin powder-1tbspn Chilli powder-1tbspn Oil - 3tbspn  Kasthuri methi Salt as required  Steps 1. First marinate the paneer with ingredients as mentioned above for 30mins. 2. Heat a pan or tawa and add 3tbspn of oil. 3. Add onion and saute until it turns golden brown.  4. Add tomato and cook it until becomes mushy.  Note: we can add tomato puree instead of adding tomato pieces.  5. Add capsicum and add marinated paneer with that mixture. 6. Saute it for 5mins and add 1/2cup of water.  7. Cook it for 3mins and add kasthuri methi. 8

Bread Omellete

Bread omellete  Its a famous snacks or breakfast nowadays.  Today i made  it with few changes it will be very delicious. Ingredient  Bread -4 slices Egg- 2 Onion 2tbspn  Capsicum- 1 small Pepper - 2tbspn  Lemon juice-1tbspn Salt as required Butter -1tbspn Oil 2tbspn  Steps 1. Heat a pan or tawa and add butter.  2. Add onion and saute it for 2 mins. 3. Then add capsicum and mix well. Note: I added green capsicum today if we want we can add red capsicum as well 4. Add lemon juice, salt, pepper and saute it for 3 mins. 5. Cool it for 5 mins. Now cut the bread's middle portion like below.  6. Add all those mixture into egg and beat them well. 7. Heat a pan and add 2 tbspn of oil. 8. Place outer layer of the bread and pour 2tpsn of egg mixture 9. Then place the middle portion of bread and press it  lightly. 10. Flip the other side and cook it well. 11. Now we can serve this with tomato sauce.

Channa masala gravy

Channa masala gravy One of the famous cuisine in India is channa masala gravy. Its very delicious to eat and perfect partner to chappathi, dosa...  Ingredient  Channa(chickpeas) - 1cup. Red chilli 5-6 Coriander-2 tbspn Cumin seed-1tbspn Fennel seed - 1tbspn Pepper - 1tbpsn Cardamom-3 Clove-3 Cinnamon-1 small stick Onion-2 (finely chopped) Tomato-4(finely chopped) Ginger garlic paste-1tbspn Mint leaves-1/4cup Oil - 2tbspn Salt as required  Steps 1. Dry roast red chilli, coriander, clove, cardamom, cinnamon, cumin seed, fennel seed, pepper.  2. Cool it and grind to form powder. 3. Add chickpeas and water (1:2 ratio) in a cooker and pressure cook for 3 whistle.  4. Heat a pan and add 2tbspn of oil. 5. Add onion and saute it until it turns golden brown. 6. Add ginger garlic paste and saute it until raw smell gone. 7. Add tomato and mint leaves. 8. Cook for 10mins then add grinded powder.  9. Mix it well and add boiled chickpeas with water. 10. Oma podi This is one of the snacks which i used to make during weekends.  It will be perfect with hot coffee or tea. My mom's favourite one she used to ask me to do this often. Ingredient  Ajwain/omam -1tbspn(we should not add more otherwise it will bitter taste) Gram flour- 1cup Rice flour-1/4cup Turmeric powder 1tbspn  Asafoetida 1 pinch Butter 1 tbspn Salt as required  Oil  Steps 1. Grind ajwain in mixer grinder and soak it in water for 3mins. 2. Mix gram flour, rice flour, turmeric powder, asafoetida, butter and salt together. 3. Add water and soaked ajwain water to make a sticky dough. 4. Put it in murukku press . 5. Heat a pan with oil. 6. Oil should be medium flame and fry the omam podi. 7. After fried all omam podi take some curry leaves and fry it in same oil. 8. Put it over omam podi for garnishing.

Semiya payasam

Semiya payasam This is one of the most famous dessert in Tamil Nadu.  Most of the people tried this recipe but here i made some changes to make it even more tastier  Ingredient  Milk -1 l Vermicelli- 150g Chironji nut- 10-15 Musk melon seed- 5-10 Cashew nut- 5 Almond- 5 Ghee- 7 tbspn Sweetless kova -2tbspn Sugar as required  Steps 1. Boil milk on medium flame.  2. Heat a pan and add 5 tbspn of ghee. 3. Fry the vermicelli in ghee2  for 3mins. 4. After milk gets boiled well, add vermicelli and stir for 2 mins. 5. Mix kova with some water to dissolve it. 6. Add sugar and kova liquid then turn off the stove.  7. Again heat a pan and add 2 tbspn of ghee.  8. Fry the nuts until it becomes golden color.  9. Add all those nut into payasam. Now serve the payasam

Bread gulab jamun

Bread gulab jamun Gulab jamun is the most famous dessert. Everyone likes this recipe. I was carving to eat gulab jamun during lockdown.  So i made it with bread. Ingredient  Bread slices -4 Milk - 1/4 cup Cardamom-2 Saffron- 5 strips  Sugar - 1 cup Water - 1 1/2 cup Lemon juice 1/2 tbspn Oil for deep fry Steps 1. Make a bread into small cubes. 2. Grind it in mixer. 3. Pour milk and make a dough. 4.  Heat a pan with water and add sugar 5. Stir it until sugar dissolves. 6. Add cardamom, saffron and lemon juice. Boil it for 5mins and turn off the stove. 7. Heat a pan with oil for fry. 8. Make a small ball from dough without any cracks. 9. Keep the flame on medium and deep fry it until it turns into golden color. 10. Add fried ball into sugar syrup and rest it for 10 mins. 11. Now serve it .

Peanut chutney

Peanut chutney We all have different type of chutney for idly, dosa. But this is the one which we can have for tamarind rice, lemon rice also.  Ingredient  Peanut- 100g Onion- 1(diced small) Tamarind- 1 small gooseberry size. Cumin seed -1 tbspn Red chilli - 4-6 Garlic 4-5 Mustard seed 1/2tbspn Urud dhal -1/2tbspn Grated coconut-2tbspn Curry leaves Oil - 3tbspn Salt as required  Steps 1. Dry roast the peanut.  2. Heat a pan and add 2tbspn of oil. 3. Add cumin seed, onion, garlic, red chilli(5) , tamarind and saute them for 2 mins. 4. Add grated coconut and fry it for 1 mins. 5. Now add peanut together and grind them with water to make smooth mixture.  Note: we can have this for rice but for idly, dosa we need to do few more step. 6. Heat a pan and add 1tbpsn of oil. 7. Add mustard and urud dhal and saute them for 1 min . 8. Add red chilli and curry leaves and cook it for 1 min. 9. Now add the whole into grinded chutney. 10. We can serve this chutney with dosa or idly

Rava Dosa

Rava dosa Dosa is the most famous recipe in tamil nadu. We all have different type of dosa. But making of batter is difficult. For this recipe, we can make batter easy and instant. Also very tasty one. Ingredient  Rava - 1cup Rice flour -1 cup Maida - 2tbspn Curd - 2tbspn Chilli - 2nos (finely chopped) Ginger-1 tbspn(finely chopped) Cumin seed -1/2tbspn  Pepper- 1/4tbpsn Onion- 1 large (finely chopped) Curry leaves - (finely chopped). Salt as required Water - 3cups Oil 2 tbspn Steps 1. Mix rava, maida, rice flour,  green chilli, curry leaves, curd, pepper, cumin and salt with water. 2. Consistency should be very watery like below 3. Rest it for 15mins. 4. Add chopped onion into it 5. Heat a tawa in high flame. Pour the batter and it will make holes. 6. Drizzle some oil. Cook it for 2mins. 7. Flip the other side and cook. Now we can serve it with peanut chutney or sambar.

Dragon chicken

Dragon chicken It is indo Chinese recipes made with spicy red sauce. We can have this as a side dish. Ingredient For fry Chicken 200g (thinly sliced) Maida 3tbsp Corn flour 3tbspn Chilli powder 1 tbspn Turmeric powder 1/4tbspn Salt- as required  Water Oil (for fry) For sauce Oil 2tbspn Cashew nut 2-3 (finely  chopped) Garlic 2 (finely chopped) Onion 1 large (diced small) Capsicum 1(diced small) Tomato sauce- 2tbspn Red chilli powder- 1tbspn Water Steps For fry 1. Mix maida, corn flour, red chilli powder, turmeric powder and salt together. Add water little by little to make thick consistency.  2. Add sliced chicken into it. 3. Rest it for 20 mins. 4. Heat a pan and pour oil into it. 5. deep fry it. For red sauce 1. Heat a pan and add 2 tbspn of oil. 2. Add cashew and garlic into it. Saute them for few mins. 3. Add onion and capsicum to it  saute them together.  4. Add tomato saute and red chilli powder. Cook for 2 mins.  Note we can use chilli sauce instead of red chilli pow

Rice rotti

Rice flour rotti This rotti is very healthy and affordable one. Long back most of the people are not aware of wheat chappathi. So they used to made chappathi with rice flour. I learnt this recipe from my grandma. She used to cook in her difficult time. It will fill. Ingredient  Rice flour -1 cup Water - 1 1/2 cup Salt as required  Grated coconut Steps 1. Mix rice flour, grated coconut and salt altogether.  2. make a smooth dough of rice flour by water little by little  3. Rest it for 20 mins. 4. Make a small ball and roll them by pressing in palm gently.  5. Heat a tawa and fry rolled dough without oil in a low flame. 6. Flip the other side once its cooked. Note: it takes 15 mins to cook. 7. Flip the rotti and cook both side. Serve them with fish curry or chicken curry.

chicken podimas

Chicken podimas  Chicken is the most common type of poultry in the world. Most of the youngsters are fond of chicken. I tried chicken podimas today. Ingredient  Chicken-250g (boneless) Onion -2 medium size(finely chopped) Tomato- 2 small size(finely chopped) Ginger garlic-1tbspn Green chilli - 2 Chilli powder- 2tbspn Garam masala - 1tbspn Turmeric powder- 1/2tbspn Egg - 2 Oil - tbspn Salt- as required Steps  1. Cook the chicken with water in cooker with turmeric powder, salt and add 1 tbspn of chilli powder. 2. After 2-3 whistle, shred chicken. 3. Heat the tawa and add 2 tbspn of oil. 4. Add onion and green chilli and saute them till onion turns golden brown. 5. Add 1 tbspn of ginger garlic paste and saute until raw smell gone. 6. Add tomato and saute them with garam masala and chilli powder. 7. Saute them for 2-3 mins and add shredded chicken with water(which is used in cooked chicken). 8. Mix them well and rest them until water evaporates.  9. Make some space
